Preserving Anniversary Layer

You have kept your anniversary cake layer, now what?

To preserve your anniversary layer, place the cake and box in the freezer for 24 to 48 hours. Once it is frozen nicely and firm, you will want to remove the cake from the box and wrap it in at least two layers of plastic wrap, smoothing it against the cake as close as you can. Frost will form where there is trapped air, so you want to eliminate that as much as possible. Place the wrapped cake back in the box that was provided and place it back into the freezer. 

For the first anniversary, remove the cake from the freezer. Immediately remove plastic wrap before the cake softens. Place the unwrapped cake back in the box and put it in the refrigerator. Let the cake thaw gradually in the refrigerator for 18 to 24 hours. Remove from refrigerator for one hour before serving. Enjoy!
